Ham Toasts with Corn and Red Pepper Relish Appetizer

These bite size hor d'oeuvres with their colorful corn relish topping are terrific finger food for your next party.

Ingredients

1 tablespoon olive oil

1/3 cup red onion, chopped

1/2 cup red bell pepper, chopped

1 cup frozen corn, thawed

2 tablespoons apple cider vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

1 teaspoon ground thyme

1 teaspoon grainy mustard

1/2 teaspoon salt

1 pinch cayenne pepper

4 slices hearty whole grain bread

8 slices lean smoked ham

Honey Tips

Honey Is Sweeter Than Sugar

Due to the high level of fructose, honey is 25% sweeter than table sugar.

Directions

Heat oil in a large skillet. Add onion and red pepper. Saute until red pepper is tender. Add corn and cook 3 more minutes. Set aside.
Whisk together vinegar, honey, thyme, mustard, salt and cayenne pepper. Pour over vegetable mixture in skillet and heat until liquid evaporates. Remove from heat and cool.
Toast bread. Place 2 pieces of ham on each slice. Cut toast into fourths. Top with corn relish and arrange on a platter to serve.
