Tuna and Broccoli Pasta Salad with Red Pepper Dressing

Adding tuna to pasta salad results in a nutritious main course. Here the pasta is dressed with a red pepper-basil sauce.

Ingredients

Dressing:

1/3 cup mayonnaise

1/2 cup roasted red peppers, rinsed and drained

1/4 cup basil leaves, tightly packed

1/4 cup capers, rinsed and drained

2 tablespoons GOLDEN BLOSSOM HONEY

1 large clove garlic

1 tablespoon lemon juice

Salad:

1 (16 ounce) package penne pasta

3 cups broccoli florets cut into small pieces

2 (6 ounce) cans white tuna, packed in water, drained and flaked

6 scallions, chopped

salt and pepper to taste

Directions

Dressing:
Place all ingredients in a blender. Process until smooth. Set aside.
Salad:
Cook pasta according to package directions. Do not overcook. Drain and rinse under cold water. Drain again. Pour pasta into a large bowl.

Cook broccoli florets in boiling water for 1 minute. Drain. Put into bowl with pasta. Add tuna, scallions and salt and pepper.

Pour dressing over salad. Toss to coat. Refrigerate until ready to serve.
Serves: 4-6
