Ingredients
3 large or 4 medium fresh beets, cooked until fork tender
1/4 cup fresh chives, minced
1/4 cup fresh parsley, chopped
1/4 cup walnuts, toasted and coarsely chopped
Dressing:
1 tablespoon Dijon mustard
1/4 cup GOLDEN BLOSSOM HONEY
2 tablespoons balsamic vinegar
salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Cut cooked beets in half and slice into ΒΌ-inch thick slices. Sprinkle with chives, parsley and walnuts.
In a small bowl whisk together dressing ingredients. Pour over beets and toss. Set aside at room temperature for 1-2 hours to allow flavors to combine. Refrigerate until ready to serve.
