Ingredients
2 tablespoons olive oil
1 medium onion, thinly sliced
1/2 cup celery, sliced
1 large clove garlic, thinly sliced
3 medium zucchini, sliced 1/4-inch thick
5 large plum tomatoes, coarsely chopped
2 tablespoons GOLDEN BLOSSOM HONEY
1 tablespoon apple cider vinegar
2 tablespoons fresh basil, thinly sliced
salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Heat oil in a large skillet. Add onion slices and celery. Sauté 2-3 minutes. Stir in garlic and zucchini. Continue cooking about 5 more minutes until zucchini is crisp tender. Stir in tomatoes, honey, vinegar, basil and salt and pepper. Cover and cook 3 more minutes or until tomatoes are heated through.
