Tomato and Fresh Corn Salsa

A versatile fresh salsa that can be served with chips as an appetizer or as a delicious accompaniment for your favorite grilled entrée.

Ingredients

2 tablespoons fresh lime juice

2 tablespooons GOLDEN BLOSSOM HONEY

2 tablespoons apple cider vinegar

2 teaspoons jalapeno pepper, minced, or more to taste

2 tablespoons fresh cilantro, chopped

salt and pepper to taste

1 cup freseh corn cut from the cob, or frozen corn

3 large plum tomatoes cut into small dice

Directions

In a small bowl whisk together lime juice, honey, vinegar, jalapeno, cilantro and salt and pepper.
Cook corn in boiling water for 30 seconds. Drain, run under cold water and drain well. Place in a medium bowl along with diced tomatoes. Add desired amount of dressing and toss well. Serve immediately or refrigerate until ready to serve.
Yields: about 2 cups
