Split Pea Soup

A simple but delicious hearty and nourishing soup chockfull of fresh vegetables.

Ingredients

1 tablespoon olive oil

1 cup fresh carrots, diced

2 cups russet potatoes, peeled and diced

2 cups sweet potatoes, peeled and diced

1 cup onion, chopped

1 stalk celery, diced

2 cloves garlic, minced

6 cups vegetable or chicken broth

2 tablespoons GOLDEN BLOSSOM HONEY

1 cup dried green split peas, rinsed and drained

1 bay leaf

salt and pepper to taste

Directions

Heat oil in a large saucepan. Add carrots, potatoes, onion, celery, and garlic. Sauté for 3-4 minutes. Add broth, honey, split peas and bay leaf. Bring mixture to a boil. Reduce heat and simmer over low for 40 – 50 minutes or until vegetables and peas are tender. Stir in salt and pepper to taste.
