Apple Turnovers

Ingredients

Dough:

1 1/2 cups flour

1/2 cup cake flour

2 teaspoons sugar

12 Tablespoons cold butter, cut into chunks

4 ounces cold cream cheese, cut into small pieces

1 egg yolk, lightly beaten

3-4 Tablespoons ice water

Filling:

2 Tablespoons butter or margarine

3 large Golden Delicious apples, peeled, cored and chopped

1/2 cup apple juice

2 Tablespoons GOLDEN BLOSSOM HONEY

2 teaspoons lemon juice

1/4 cup applesauce

2 Tablespoons golden raisins

1 teaspoon grated lemon zest

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground allspice

Honey Is One of the Oldest Foods

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

DOUGH: Combine flour and sugar in a food processor. Add butter and cream cheese. Process several times until mixture resembles coarse meal. Whisk together egg yolk and 3 tablespoons cold water. Add to flour mixture and pulse just until dough begins to clump together. Add last tablespoon of ice water if dough seems too dry. Remove dough from processor and shape into ball. Flatten slightly. Wrap in plastic wrap and refrigerate for 30 minutes.
FILLING: In a large skillet, melt butter over medium-high heat. Add apples and cook for approximately 5 minutes, stirring often. Add apple juice, honey and lemon juice. Lower heat and cook an additional 5 minutes until liquid is absorbed by apples. Remove from heat. Stir in applesauce, raisins, lemon zest and spices. Let cool.
DIRECTIONS: On a floured surface, roll out dough until thin (about 18 x 20 inches). Cut out 6 inch rounds. Gather the dough and re-roll the scraps until you have a total of 10 rounds. Divide apple filling equally on lower half of rounds. Moisten outer edges of each circle with water. Fold dough over apple filling. Crimp edges with a fork to seal the turnover. Place on a baking sheet and chill for 15 minutes. Preheat oven to 425°. Remove turnovers from refrigerator. Make 2 small slits in the top of each turnover. Bake for 10 minutes in center of oven. Bake an additional 8-10 minutes on a higher rack until golden brown. Remove from oven and cool. Sprinkle with powdered sugar. Serves: 10.
