Apple Walnut Muffins

Marvelously moist muffins!


1 1/2 cups flour

1 teaspoon baking soda

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 eggs

1/2 teaspoon vanilla


2 Granny Smith apples, peeled, cored and finely chopped

2 tablespoons melted butter

2/3 cup walnuts

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.


Preheat oven to 400°.
In a large bowl, mix together first 5 ingredients. In a separate bowl, whisk eggs. Add remaining ingredients to eggs and mix until well combined. Combine with dry ingredients until just blended. Spray muffins pan with non-stick cooking spray. Distribute batter evenly into muffin cups. Bake for 15-17 minutes, until toothpick inserted in center comes out clean.
Yields: 12 muffins
