Asian Meatballs

Microwave recipe

Ingredients

Meatballs:

1 1/2 pounds extra lean ground beef

1 egg

3/4 teaspoon salt

1/4 teaspoon pepper

1/4 cup dried breadcrumbs

1/4 cup water

1/4 teaspoon ground ginger

2 cloves garlic, crushed

1 (14 ounce) can pineapple chunks, drained (reserve 4 ounces liquid for sauce)

Sauce:

2 Tablespoons red wine vinegar

1/4 cup soy sauce

2 1/2 Tablespoons GOLDEN BLOSSOM HONEY

1 clove garlic, crushed

2 Tablespoons cornstarch

1/2 teaspoon ground ginger

1 onion, cut into chunks

1 small green pepper, seeded and cut into chunks

1 small red bell pepper, seeded and cut into chunks

Directions

Meatballs: Combine all meatball ingredients. Mix lightly. Shape into small balls. In an ungreased microwave-safe casserole, arrange meatballs in a single layer. Microwave uncovered on HIGH for 4 minutes. Add pineapple chunks to meatballs. Let stand while preparing the sauce. Sauce: Combine all sauce ingredients including reserved pineapple liquid. In a medium microwave-safe casserole, microwave uncovered on HIGH for 4 to 5 minutes, stirring several times. Add sauce to meatballs. Microwave until heated through (about 4 minutes). Serves: 4-6 (Main Course) or 8-10 (Appetizer).
