Avocado, Grapefruit and Turkey Salad

For a light meal after the big holiday feast...try this quick and easy turkey salad. A great way to use up leftovers!

Ingredients

Dressing:

1/2 cup rice vinegar

1/3 cup GOLDEN BLOSSOM HONEY

1 tablespoon soy sauce

1 teaspoon grated fresh ginger

1 tablespoon sesame oil

salt to taste

Salad:

1 large head red leaf lettuce, torn into bite size pieces

1 avocado, peeled and cut into bite size pieces

1 pink grapefruit, peeled and sectioned

2 cups cooked turkey or chicken, cubed

1/4 cup pine nuts, toasted

Directions

In a small bowl whisk together dressing ingredients.
Place all salad ingredients except pine nuts in a large bowl. Drizzle with desired amount of dressing. Toss lightly and sprinkle with pine nuts to serve.
