Basil Chicken over Pasta

Chicken and pasta make a satisfying one-dish meal.


2 Tablespoons olive oil

1 1/2 cups mushrooms, sliced

2/3 cup onions, chopped

2 garlic cloves, minced

1 pound chicken breasts, skinned and boned, cut into 1-inch pieces

1/2 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon pepper


2 cups fresh tomatoes, chopped

16 ounces fettucine, cooked according to package directions

1/4 cup Parmesan cheese

Honey Never Spoils

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.


In a skillet heat oil over medium heat. Add mushrooms, onions and garlic. Saute for several minutes. Add chicken, herbs, salt, pepper and honey. Saute until chicken is cooked, about 10 minutes.
Add tomatoes and cook for an additional 5 minutes. Serve over hot pasta. Sprinkle with Parmesan.
