Ingredients
2 cups 100% bran cereal
1 cup buttermilk
1/2 cup crushed pineapple, drained
1/4 cup shredded carrot
1/4 cup walnuts, coarsely chopped
1/3 cup vegetable oil
1/2 cup GOLDEN BLOSSOM HONEY
1 egg
1 cup whole wheat flour
1 teaspoon baking soda
1/8 teaspoon salt

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Preheat oven to 400°.
Line a muffin tin with paper baking cups.
In a large bowl stir together cereal and buttermilk. Let stand 5 minutes. Stir in pineapple, carrots, nuts, oil, honey and egg. Mix well. Add remaining ingredients. Stir until just combined.
Spoon batter into cups. Fill 3/4 full. Bake 18-20 minutes or until muffins test done.
Yields: 12-16 muffins
