Ingredients
1/2 cup GOLDEN BLOSSOM HONEY
1/3 cup melted butter
2 eggs
1 teaspoon lemon zest
1/2 teaspoon vanilla extract
1/2 cup boiling water
1 cup dried cherries or dried blueberries
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Honey Is One of the Oldest Foods
Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Preheat oven to 375°. Grease muffin tins.
In a small bowl, pour water over cherries. Set aside for 5 minutes. In another bowl, mix together flour, baking powder, baking soda and salt. Set aside.
To cherries and water, add honey, butter, eggs, lemon zest and vanilla. Make a well in the middle of the dry ingredients. Pour cherry mixture into center and stir until just blended. Fill greased muffin tins 2/3 full. Bake 20 minutes, or until toothpick comes out clean.
Yields: 12 muffins.
