Chilled Garlic Soup

The ingredients may sound surprising in this Spanish inspired soup but the flavor is delicious and refreshing on a hot summer day.

1/8 cup blanched almonds, finely ground

1/2 cup breadcrumbs, made from toasted bread

3 medium cloves garlic, coarsely chopped

2 tablespoons olive oil

1 tablespoon white wine vinegar

2 cups water

8 ice cubes

1 pound green seedless grapes, cut in half

Honey Tips

Honey Is One of the Oldest Foods

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

In a small food processor blend almonds, bread crumbs and garlic until a paste forms. Add oil and process. Spoon into a bowl. Stir in honey and vinegar. Once combined mix in water, ice cubes and grapes. Set aside for 30 minutes to chill.
Ladle into bowls and top with a few sliced almonds.
