Chilled Pineapple Gazpacho

Lime, honey and cilantro give this chilled soup its zesty and refreshing flavor.

Ingredients

3 cups fresh pineapple, peeled, cored and chopped

2 tablespoons cilantro, chopped

2 teaspoons GOLDEN BLOSSOM HONEY

salt to taste

1 cucumber, peeled, seeded and chopped

2 small onions, chopped

1 red bell pepper, halved, seeded and chopped

1 cup pineapple juice

1/4 cup lime juice

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

In a food processor combine pineapple, cucumbers and onions. Process until smooth. Add peppers and pulse until finely chopped.
Transfer to a bowl and stir in juices, cilantro, honey and salt. Chill for several hours. Ladle into gazpacho glasses or soup bowls.
