Chilled Tomato Citrus Soup

The surprisingly delicious addition of lime juice and cilantro gives this soup a distinctive flavor that you will love. It works beautifully as a first course or light lunch.

Ingredients

2 tablespoons olive oil

1/3 cup shallots, chopped

1 tablespoon garlic, chopped

4 (14.5 ounce) cans diced tomatoes

2 tablespoons GOLDEN BLOSSOM HONEY

1 (14.5 ounce) can low salt chicken broth

1 cup dry white wine

1/3 cup fresh lime juice

1/4 cup fresh cilantro, chopped

1 1/2 teaspoons grated lime zest

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Heat oil in a large saucepan. Add shallots and garlic. Sauté for 1 minute. Add tomatoes and honey. Bring to a boil. Lower heat and simmer for 15 minutes. Stir in remaining ingredients. Bring to a boil and simmer for another 30 minutes. Let cool and then process in batches in blender until soup is smooth. Chill until very cold.
Yields: approximately 7 cups
