Chocolate Glazed Fruit and Nut Cake

This cake is chockfull of your favorite dried fruits. The grated apple keeps the cake moist and the topping is a pleasing chocolate glaze.

Ingredients

Cake:

1/2 cup butter, room temperature

1/4 cup sugar

3 eggs

2/3 cup GOLDEN BLOSSOM HONEY

3 cups flour

1 teaspoon baking powder

1 1/2 teaspoons baking soda

1 cup orange juice

1 Granny Smith apple, peeled and coarsely grated

1 tablespoon lemon juice

1/3 cup dried cranberries

1/3 cup dried apples, coarsely chopped in processor

1/3 cup dried apricots, coarsely chopped in processor

1 cup walnuts, coarsely chopped

Glaze:

2 tablespoons butter

1 tablespoon GOLDEN BLOSSOM HONEY

1/4 cup chocolate chips

How Honey Is Created

Honey is created when bees mix plant nectar, a sweet substance secreted by flowers, with their own bee enzymes.

Directions

Preheat oven to 350°.. Lightly coat a 10-cup bundt pan with baking spray.
Cake:
In an electric mixer beat together butter and sugar. Add eggs one at a time until well blended. Add honey and beat to combine.
In a large bowl stir together flour, baking powder and baking soda. Add to egg mixture alternately with orange juice and beat just until incorporated. Add grated apple and lemon juice. Mix. Stir in dried fruit and nuts. Pour into prepared pan.
Bake 45-50 minutes or until cake tests done. Place on a wire rack to cool for 10 minutes. Remove cake from pan and continue cooling on rack
Glaze:
In a small pan, heat all glaze ingredients over a low heat stirring with a whisk until just melted. Do not over-cook. Remove from heat, cool slightly and then drizzle glaze over cooled cake letting some of the glaze run down the sides.
Serves: 8-10
