Cranberry-Orange Muffins

Cranberries give these moist muffins a tangy zip.

Ingredients

2 cups flour

1/4 cup brown sugar, packed

1/2 cup grape nuts cereal, toasted

2 teaspoons baking powder

1 teaspoon baking soda

1 egg, beaten

1/2 cup GOLDEN BLOSSOM HONEY

1/2 cup orange juice

1/2 cup canola or vegetable oil

2 teaspoons vanilla

1 cup fresh cranberries

2 teaspoons grated orange zest

1/2 cup pecans, chopped

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 400°.
Grease 12 muffin cups. In a small bowl whisk together the first five ingredients.
In a medium bowl, stir together egg, honey, orange juice, oil and vanilla. Fold in cranberries, zest and nuts. Add dry ingredients to wet and stir until just combined. Do not over mix.
Bake 15-20 minutes or until tester comes out clean.
Cool in pan for 5 minutes and then remove to rack.
