Ingredients
2 1/4 cups flour
3/4 cup sugar
1/4 cup yellow cornbread
2 teaspoons baking soda
1/2 teaspoon ground nutmeg
1 teaspoon ground ginger
1/4 teaspoon ground allspice
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 cup dried cranberries
1/2 cup pecans, chopped
1 cup plain low-fat yogurt
1/3 cup GOLDEN BLOSSOM HONEY
2 eggs
2 Tablespoons canola oil

How Honey Is Created
Honey is created when bees mix plant nectar, a sweet substance secreted by flowers, with their own bee enzymes.
Directions
Preheat oven to 350°.
In a large mixing bowl, combine first 9 ingredients. Mix in cranberries and pecans.
In a separate bowl, mix together yogurt, honey, eggs and oil. Whisk thoroughly. Add wet mixture to dry mixture and stir until well combined. Spray a 5×9-inch loaf pan with non-stick cooking spray. Place batter into loaf pan and bake for 55 to 60 minutes or until toothpick inserted in center comes out clean.
Cool 15 minutes in pan. Remove and cool on wire rack.
Yields: 16 slices.
