Cranberry Tea Cakes

A favorite with tea or coffee. The cranberries make these treats perfect for holiday breakfasts.


2 1/4 cups flour

1/3 cup sugar

1/4 cup brown sugar, packed

1/4 teaspoon cinnamon

1/8 teaspoon salt

1/2 cup butter, softened

1 teaspoon baking powder

1/4 teaspoon baking soda

1/3 cup milk


3/4 cup dried cranberries

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.


Preheat oven to 350°
In a large bowl, stir together first five ingredients. Add butter and beat on medium speed until crumbly. Add baking powder, soda, milk, and honey and beat unitl moistened (1-2 minutes). Stir in cranberries.
Shape into 10 cakes and place on a cookie sheet approximately 2 inches apart. Bake for 12-15 minutes or until tester comes out clean.
