Frosted Carrot Cake

A heavenly, moist cake with creamy icing!

Ingredients

1 1/2 sticks butter or margarine

1 cup GOLDEN BLOSSOM HONEY

2 eggs

1/2 cup orange juice

2 1/2 cups flour

1 1/2 teaspoons ground cinnamon

2 teaspoons baking soda

4 teaspoons baking powder

2 cups carrots, grated

1 1/4 cup raisins

1/2 cup coconut

1 cup pecans, chopped

Frosting:

8 ounces cream cheese, softened

1/2 cup GOLDEN BLOSSOM HONEY

1 teaspoon vanilla

1/4 cup confectioner’s sugar

1/4 cup milk

Honey Is One of the Oldest Foods

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 350°.
Beat butter, honey, eggs and orange juice until thoroughly combined. Blend in dry ingredients, beating well. Add remaining ingredients and mix well.
Pour into a buttered 13x9x2″ baking dish. Bake for 30 to 45 minutes or until wooden pick inserted in center comes out clean. Allow cake to cool before frosting.
Frosting:
Beat together all ingredients. Spread on cooled cake.
