Ingredients
Glaze:
3 tablespoons butter, room temperature
1/3 cup brown sugar
4 tablespoons granulated sugar
1 tablespoon GOLDEN BLOSSOM HONEY
2 teaspoons water
Muffins:
1/2 cup GOLDEN BLOSSOM HONEY
1 egg
1/4 cup vegetable oil
1 cup apple juice
2 cups flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 cup raisins
1 cup finely chopped Granny Smith apple

Honey Is One of the Oldest Foods
Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Glaze:
Using an electric mixer beat together butter, brown sugar and granulated sugar until well combined. Add honey and water. Beat until fluffy. Place a heaping teaspoon of butter mixture into each muffin cup. Cover your fingers with plastic wrap and smooth mixture over bottom and around edges of each cup leaving any excess in bottom of cup.
Muffins:
In a medium bowl beat together honey, egg and vegetable oil. Add apple juice. Beat to combine.
In a large bowl combine flour, baking powder, cinnamon and cloves. Stir in raisins. Gently add honey mixture to dry ingredients. Using a spoon, stir until just moistened. Fold in chopped apples.
Divide batter evenly between prepared muffin cups. (Cups will be almost full.) Bake 20-25 minutes or until muffins test done.
Let cool on rack for 5 minutes. Working quickly so topping does not stick, run a knife around the outside of each muffin. Turn pan on its side and using a fork gently remove muffins. Don’t worry if some of the topping sticks to bottom of pan. Simply spoon out on top of muffin.
Yields: 12 standard size muffins
