Gorgonzola and Carmelized Onion Sandwiches

Sweet onion relish and tangy Gorgonzola create a knockout blending of flavors in this open-faced sandwich.

Ingredients

Carmelized Onion Relish

2 tablespoons olive oil

2 large onions, thinly sliced

3 tablespoons GOLDEN BLOSSOM HONEY

2 tablespoons balsamic vinegar

3 tablespoons golden raisins

salt and pepper to taste

1 loaf rustic country bread, sliced into 8 (1/2-inch thick) slices

1 (8 ounce) package Gorgonzola cheese, crumbled

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

In a large skillet, heat oil. Add sliced onions and cook over a medium low heat about 20 minutes, stirring often, until onions just begin to turn golden. Add honey and cook until onions are very soft and deep golden brown. Stir in vinegar and raisins. Remove from heat. Season with salt and pepper. Refrigerate for up to 3 days.
Arrange bread slices on a cookie sheet. Top with crumbled cheese. Place a spoonful of onions on top of cheese. Broil just until cheese begins to bubble.
