Greek Walnut Cookies

Ingredients

Cookies:

1 1/4 cups walnuts

1/3 cup sugar

2 cups flour

3/4 teaspoon ground cinnamon

1 stick butter or margarine, softened

1/4 cup rum or apple juice

2 teaspoons vanilla

Syrup:

1 cup sugar

3/4 cup water

1/2 cup GOLDEN BLOSSOM HONEY

1 tablespoon rum or apple juice

1 teaspoon grated lemon zest

6 whole cloves

1 cinnamon stick or 1 teaspoon ground cinnamon

Garnish:

1/4 cup walnuts, finely chopped for top of cookies

In the days before biology and botany were understood, people thought it was a special kind of magic that turned flower nectar into honey.

Directions

Preheat oven to 350°. Butter baking sheet, or for better results, line with parchment paper. Place first 4 ingredients in a food processor. Pulse until nuts are finely ground. Add butter, rum and vanilla and process to blend. Remove from processor. Break off pieces of dough and roll into oval shapes the size of a walnut. Bake 1/2 inch apart for 25 minutes, or until bottoms are lightly brown. While cookies are baking, prepare syrup. Bring all syrup ingredients to a boil. Remove whole cloves and cinnamon stick. Put warm cookies on a large plate. Slowly drizzle with syrup. Then sprinkle with 1/4 cup finely chopped walnuts. Cool. Transfer cookies to a plate and serve.
