Ingredients
Relish:
1 pound plum tomatoes, coarsely chopped
1/4 cup scallions, chopped
1/8 cup balsamic vinegar
2 tablespoons GOLDEN BLOSSOM HONEY
2 tablespoons olive oil
1 clove garlic, chopped
1 tablepoon fresh basil, chopped
salt and pepper to taste
4 (1-inch) center-cut pork chops

Directions
Relish:
Combine all ingredients in a bowl. Set aside for 15 – 30 minutes to allow flavors to develop and juices to form.
Chops:
Arrange chops in a glass-baking dish. Drain liquid from relish and spoon liquid over chops. Let marinate 15-30 minutes, turning occasionally. Grill or broil pork about 5 minutes per side, or until internal temperature reaches 160°.
To serve, place pork on plates and spoon relish over the top.
Serves: 4
