1/2 cup butter, room temperature
3/4 cup GOLDEN BLOSSOM HONEY
2 large eggs
3/4 cup buttermilk
2 cups flour
1 teaspoon baking soda
1 1/2 Tablespoons lemon zest
3/4 cup raisins

Honey Is One of the Oldest Foods
Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Preheat oven to 400°. Grease a 12-cup muffin tin.
In a mixing bowl beat together butter and honey. Add eggs to mixture and beat well. Blend in buttermilk.
In a separate bowl combine flour, baking soda and lemon zest. Add wet ingredients to flour mixture. Mix until flour is moistened. Stir in raisins.
Fill muffin cups ¾ full. Bake for about 17 minutes or until golden brown. Serve warm.
