Meatless Three Bean Chili

Ingredients

1 tablespoon olive oil

3 onions, chopped

1 green bell pepper, seeded and chopped

1 medium zucchini, coarsely chopped

2 carrots, coarsely chopped

5 cloves garlic, finely chopped

10 sundried tomatoes (not oil packed), cut into small pieces

1/4 teaspoon cumin

2 tablespoons chili powder

1 tablespoon paprika

2 teaspoons dried oregano

1/2 teaspoon cayenne pepper

12 ounces beer

1 (28 ounce) can whole tomatoes, chopped, with their juice

1 tablespoon grated unsweetened chocolate

2 teaspoons GOLDEN BLOSSOM HONEY

2 bay leaves

1 (19 ounce) can black beans, rinsed and drained

1 (19 ounce) can white beans, rinsed and drained

1 (19 ounce) can red kidney beans, rinsed and drained

garnish – plain yogurt or sour cream, grated cheddar cheese, chopped scallions, 1/4 cup fresh cilantro, chopped

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Heat oil in a large pan. Add onions, green pepper, zucchini and carrots. Cook over medium heat for 10 minutes, stirring occasionally until vegetables are softened. Add next 7 ingredients. Stir. Add beer and simmer 10 more minutes. Stir in tomatoes, chocolate, honey and bay leaves and continue to simmer on low heat 15 minutes. Gently stir in all beans. Cook over low heat until beans are heated through. Remove bay leaves. Serve chili in bowls topped with desired garnishes along with slices of crusty bread. Serves: 8.
