Melon with Honey-Lime-Ginger Sauce

Ingredients

2 Tablespoons GOLDEN BLOSSOM HONEY

2 Tablespoons orange juice or rum

1 Tablespoon fresh lime juice

1/8 teaspoon ground ginger

4 cups honeydew or cantalope, diced

1/4 cup fresh mint leaves, minced (optional)

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Whisk together first 4 ingredients. Toss with diced fruit. Cover and refrigerate up to 3 hours. Serve in parfait glasses. Sprinkle with fresh mint, if desired. Serves 4.
