Mexican Omelet

The mouth watering combination of salsa, melted cheese and chili peppers makes this South of the border omelet irresistible!

Ingredients

1 cup salsa

1 teaspoon GOLDEN BLOSSOM HONEY

2 Tablespoons butter

1 small onion, chopped

1 (3 ounce) can chopped chili peppers, drained

6 eggs, beaten

1/4 pound Monterey jack cheese, grated

salt and pepper to taste

Honey has different flavors and colors, depending on the location and kinds of flowers the bees visit. Climatic conditions of the area also influence its flavor and color.

Directions

In a small bowl, combine salsa and honey.
Melt one tablespoon of butter in an omelet pan. Saute onions and pepper until onions are transparent. Remove from pan. Beat eggs. Melt remaining tablespoon of butter in the pan. Add eggs. Cook until set. Sprinkle grated cheese, onions and peppers on top of eggs. Fold in half. Remove to platter and serve topped with salsa mixture.
Serves 2-3.
