Mud Pie Ice Cream Sandwiches

Rich homemade fudge sauce spread on crisp chocolate wafer cookies filled with scrumptious ice cream. The best ice cream sandwiches you have ever tasted!


Fudge Sauce:


2 tablespoons unsweetened cocoa

1 tablespoon milk

1 tablespoon butter

1/4 teaspoon vanilla extract

20 thin chocolate wafer cookies, sometimes found in the ice cream aisle

1 pint coffee ice cream, slightly softened

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.


Fudge Sauce:
In a medium saucepan, combine honey, cocoa and milk. Bring to a boil stirring constantly with a whisk. Continue cooking 1-2 minutes. Stir in butter and vanilla. Remove from heat and chill until thickened.
Spread 1 teaspoon of fudge sauce on 10 of the cookies. Top with 1 tablespoon of softened ice cream. Top each with another cookie and press down gently. Wrap each sandwich individually in plastic wrap and freeze in a freezer bag.
