Orange Glazed Rosemary Cookies

The subtle taste of rosemary is a pleasant surprise in these cookies. An orange glaze highlights the citrus flavor.

Ingredients

Cookies:

1/2 cup shortening

1/4 cup butter, room temperature

3/4 cup sugar

1 egg

1/4 cup GOLDEN BLOSSOM HONEY

1 tablespoon fresh orange juice

1 tablespoon grated orange zest

2 cups flour

1 tablespoon fresh rosemary, finely chopped

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Glaze:

2/3 cup powdered confectioners sugar

4 teaspoons fresh orange juice

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 325 degrees. Lightly grease baking sheets.
Cookies:
Using an electric mixer, beat shortening, butter and sugar for 2 minutes. Add egg, honey, juice and zest. Beat 1 minute.
In a medium bowl whisk together remaining ingredients. Add to wet ingredients and beat until combined.
Drop dough by teaspoonfuls onto prepared baking sheets. Bake about 12 minutes until lightly browned. Cool on rack.
Glaze:
Once cookies are cool prepare glaze. In a small bowl stir together powdered confectioners sugar and 4 teaspoons of orange juice until smooth. Using a knife spread a small amount of glaze on each cookie. Place cookies on rack and allow glaze to set.
Yields: about 3 dozen 2 1/2-inch cookies
