Orange Marinated Flank Steak


3/4 cup canned Mandarin oranges, drained

4 scallions chopped

1/4 cup light soy sauce

1/2 cup vegetable oil

3 Tablespoons balsamic vinegar


3 cloves garlic, peeled and crushed

2 Tablespoons sherry

2 pounds flank steak

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.


Combine all ingredients, except flank steak, in a saucepan and bring to a boil. Remove from heat and cool to room temperature. Place the steak in a rectangular glass dish. Pour the marinade over the meat, coating it well on both sides. Cover and refrigerate for 1 hour, turning occasionally. When ready to cook, spray grill with non-stick cooking spray. Sear steak over a very hot fire for 5-6 minutes on each side, or until medium rare. To serve, carve diagonally across the grain in thin slices. Serves 4.
