Orange Pumpkin Muffins

Ingredients

1/2 cup walnuts, chopped

1 1/2 cups flour

1/2 cup whole wheat flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1 large seedless orange, cut into 4 sections

1 egg

1 egg white

2/3 cup solid pack pumpkin

1/2 cup firmly packed brown sugar

1/4 cup GOLDEN BLOSSOM HONEY

3 Tablespoons vegetable oil

1/2 cup dried apricots, chopped

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Preheat oven to 400°. Coat 12 muffin cups with non-stick cooking spray. In a large bowl, mix together the first 7 ingredients. Puree orange sections with skin a food processor. Add next 6 ingredients. Process until combined. Add to flour mixture along with apricots and walnuts. Stir until just moistened. Distribute evenly among 12 muffin cups. Bake for 18 minutes, or until muffin tests done. Yield:12 muffins.
