Orange-Rosemary Marinated Turkey Breast

An elegant entree - roasted turkey breast, permeated with the piquant flavors of citrus and rosemary.

Ingredients

1 (5-6 pounds) whole boneless turkey breast, skinned

Marinade:

3 large shallots, minced

1 cup fresh orange juice

1/3 cup olive oil

1/3 cup fresh rosemary, chopped or 4 teaspoons dried

4 tablespoons balsamic vinegar

2 tablespoons grated orange zest

3 tablespoons GOLDEN BLOSSOM HONEY

2 teaspoons salt

1/4 teaspoon dried red pepper flakes

Garnish:

fresh orange slices

fresh parsley

Honey Is One of the Oldest Foods

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 325°. Line a roasting pan with foil sprayed with vegetable spray.
Pound turkey breast to flatten. Place turkey in a sturdy, sealable plastic bag. Mix all marinade ingredients together and pour into bag with turkey.
Reseal tightly and allow to marinate in refrigerator at least 6 hours or overnight.
Place marinated turkey breast on rack in prepared pan. Roast for approximately 2 hours, or until meat thermometer inserted in thickest part registers 180°. If any marinade remains in bag, use to baste turkey occasionally during roasting.
To serve, garnish with orange slices and parsley.
