Peanut Butter & Banana French Toast Sandwiches

Ingredients

Filling:

8 tablespoons creamy peanut butter

2 bananas, peeled

4 teaspoons frozen orange juice concentrate

1 teaspoon GOLDEN BLOSSOM HONEY

8 slices thick bread

4 large egg whites

1/2 cup skim milk

2 teaspoons butter

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Spread 2 tablespoons of peanut butter over each of four slices of bread.
In a small bowl mash bananas with a fork. Stir in orange juice concentrate and honey. Spread banana mixture over peanut butter on 4 slices of bread and top with remaining slices, forming 4 sandwiches.
Whisk together egg whites and milk and pour into a shallow dish. Soak sandwiches on each side for 20 seconds. Transfer to a plate.
Melt 1 teaspoon butter in a nonstick skillet over medium heat. Cook sandwiches until underside is browned, about 5-7 minutes. Lift and add remaining butter. Turn sandwiches and cook for another 5-7 minutes, or until browned.
