Pork Chops with Dried Cherry Sauce

Ingredients

4 center cut rib pork chops

1 tablespoon dried rosemary

1/2 teaspoon salt

1/4 teaspoon pepper

2 tablespoons olive oil

1/4 cup chopped onions

1/2 cup dried cherries

1/3 cup balsamic vinegar

1/2 cup chicken broth

Directions

In a small bowl, mix together rosemary, salt and pepper. Pat mixture onto pork chops. Heat olive oil in a large skillet over medium high heat. Add chops and onion and cook until pork is well browned on each side. Remove pork chops to a plate to keep warm.
To the same skillet add cherries and vinegar. Cook over medium high heat stirring to combine onions, cherries and vinegar. Mix in chicken broth and honey. Continue cooking for 3 minutes. Place pork chops in sauce. Cover and simmer 8-10 minutes over a low heat, just until pork is no longer pink.
