Pork Tacos

Great for a quick dinner or lunch. Squeeze a little fresh lime juice over the cooked pork before rolling the tacos for added flavor and serve with a side of warm black beans.

Ingredients

1 pound pork tenderloin, trimmed of fat and cut into thin strips

salt and pepper

1 tablespoon olive oil

2 tablespoons GOLDEN BLOSSOM HONEY, divided

1 cup onion, thinly sliced

1 jalapeno pepper, seeded and minced

1 cup plum tomatoes, chopped (about 3 large)

1/4 cup fresh cilantro, chopped

3 tablespoons fresh lime juice

8 (6-inch) flour tortillas

1 avocado, sliced

Honey Is One of the Oldest Foods

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Sprinkle strips of pork with salt and pepper. Heat olive oil in a large skillet until hot but not smoking. Add pork and sauté 5 minutes stirring often, until pork is browned. Add one tablespoon honey and cook stirring for 1 more minute. Remove from pan.
Add onion and jalapeno to the same pan. Sauté 5 minutes until onions are soft and begin to brown. Add chopped tomatoes and remaining tablespoon of honey. Bring to a simmer. Add pork. Cook for 3 minutes. Stir in cilantro and lime juice.
Meanwhile heat tortillas according to package directions. Spoon filling onto each tortilla and sprinkle with avocado slices. Roll up tortillas and serve.
