Red Lentil Soup

A hearty and wholesome main dish vegetarian soup, rich with lentils and spiced with cumin.

Ingredients

2 tablespoons olive oil

2 carrots, coarsely diced

1 cup onion, chopped

2 cloves garlic, minced

1 1/2 teaspoons ground cumin

8 cup vegetables broth

2 tablespoons GOLDEN BLOSSOM HONEY

1 cup red lentils

1/3 cup rice, not instant

3 tablespoons fresh lemon juice

1/4 cup fresh cilantro, chopped

salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

In a large saucepan heat oil. Add carrots, onion and garlic. Sauté 5 minutes. Stir in cumin and cook 1 minute. Add broth, honey, lentils and rice. Bring to a boil. Reduce heat and simmer about 20 minutes until lentils soften. Stir in lemon juice and cilantro. Add salt and pepper to taste. Serve soup garnished with a fresh cilantro leaf.
