Shrimp Cole Slaw

Serve this as an entree over a bed of lettuce or as a delicious side dish.


1 1/2 pounds shrimp, cooked, peeled, and chopped into small pieces

1 onion, thinly sliced

1 cup mayonnaise

1/4 cup fresh basil, chopped

3 Tablespoons fresh chives, diced

1 teaspoon tarragon, dried

2 1/2 teaspoons Dijon mustard

2 1/2 teaspoons lemon juice


1 Tablespoon apple cider vinegar

8 cups green cabbage, shredded

fresh ground pepper

Honey Is Sweeter Than Sugar

Due to the high level of fructose, honey is 25% sweeter than table sugar.


In a large bowl, mix together onion, mayonnaise, basil, chives, tarragon, mustard, lemon juice, honey, and vinegar. Add cabbage and stir until well mixed. Add shrimp. Season with pepper and serve.
May be refrigerated for up to 3 hours.
