Smoked Sausage with Caramelized Onions on French Baguette

Golden browned sausages, topped with caramelized onions and melting cheese is the perfect sandwich to serve at a football or soccer party.

Ingredients

Onions:

2 tablespoons olive oil

2 pounds red onions, skinned, halved and thinly sliced

2 tablespoons red wine vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

1/2 teaspoon caraway seeds

salt and pepper to taste

4-6 fully cooked smoked sausages such as chicken-apple sausages

4 ounces smoked Gruyere cheese, shredded

1 or 2 French baguettes, divided into 4 pieces

Sauce:

2 tablespoons grainy mustard

2 tablespoons GOLDEN BLOSSOM HONEY

Directions

Onions:
Heat oil in a large skillet. Add onions and cook 7 minutes stirring often until onions begin to brown. Stir in vinegar, honey and caraway seeds and continue cooking about 15 more minutes until onions are deep brown. Season with salt and pepper. Set aside.
Sausage:
Cover a large cookie sheet or broiler pan with foil. Spray with nonstick cooking spray. Place sausages on prepared pan. Broil until golden brown and crisp, 4-6 minutes per side.
Sauce:
In a small bowl mix together mustard and honey.
Spread sauce on baguettes. Place one sausage on each baguette. Spoon onions over sausage and sprinkle cheese over onions. Place sandwiches under the broiler until cheese begins to melt. Watch carefully so bread does not burn.
Serves: 4
