Strawberry and Goat Cheese Salad

Fresh mint adds an interesting dimension to this salad of greens and sliced strawberries. The lemony dressing is enhanced by the delicate flavor of minced shallots.

Ingredients

Dressing:

1/4 cup fresh lemon juice

2 tablespoons GOLDEN BLOSSOM HONEY

1/4 cup olive oil

1 small shallot, finely chopped

1 teaspoon fresh tarragon, chopped

1/4 teaspoon salt

1/8 teaspoon pepper

Salad:

1 (5-6 ounce) package baby romaine lettuce leaves

1/4 cup fresh mint leaves, chopped

2 cups fresh strawberries, sliced

1 (6 ounce) log goat cheese, cut into 8 slices

Directions

Dressing:
In a small bowl whisk together all dressing ingredients. Set aside.
Salad:
In a large bowl combine greens, mint leaves and strawberries. Add desired amount of dressing. Toss. Divide salad among 4 plates. Garnish each with 2 slices of goat cheese.
