Honey Tips
Honey Is One of the Oldest Foods
Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Preheat oven to 170ºF or as low as it will go. Line one large (or two medium) baking sheet with parchment paper or a silicon baking mat.
Add the strawberries with fresh lemon juice and honey to your high speed blender. Process until fully blended and smooth. Taste and adjust your sweeter and lemon juice, as needed.
Spread the mixture evenly onto the lined baking sheet (or sheets), about 1/8 to 1/4 inch thickness.
Bake for 6-8 hours, until the leather is no longer sticky and it easily peels away from the parchment paper. Time can vary depending on your oven and it’s lowest temperature, so be sure to keep checking it so it doesn’t dry out.
Once cooled, peel the fruit leather off the mat and use scissors to cut the fruit leather into strips. Roll up to serve, and store in an airtight container. It will keep at least a week, longer if kept in the fridge or freezer.
