Tortellini in Tomato Broth

Colorful, delicious and satisfying, this soup is perfect for lunch or a light dinner.

Ingredients

2 cups vegetable broth

1 cup water

1 (14.5 ounce) can diced tomatoes

1 tablespoon balsamic vinegar

1 tablespoon olive oil

2 tablespoons GOLDEN BLOSSOM HONEY

1/4 cup dry white wine

1 (9 ounce) package cheese tortellini (found in dairy section)

2 cups fresh baby spinach leaves

1/2 cup fresh basil leaves, thinly sliced

1/4 teaspoon ground black pepper

1/4 cup Parmesan cheese, grated

Directions

Combine the first seven ingredients in a large saucepan. Bring to a boil. Add tortellini and cook 5 minutes. Turn off heat. Place spinach, basil and pepper in pot, cover and let stand 2 minutes. Stir to combine.
To Serve: Ladle into bowls and top with some Parmesan cheese.
