Upside-Down Cranberry & Orange Zest Muffins

Unusual breakfast muffins that are served upside-down so the cranberries are on top!

Ingredients

2 cups fresh cranberries

3/4 cup GOLDEN BLOSSOM HONEY

1 tablespoon orange zest

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

2 cups flour

1 tablespoon baking powder

1/4 cup sugar

1/2 teaspoon salt

1 egg

1/4 cup butter, melted

1 cup milk

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 400°.
Lightly grease a 12-cup muffin tin.
In a medium saucepan combine cranberries, honey, orange zest, cinnamon and nutmeg. Bring to a boil and cook covered 3 minutes. Uncover and simmer another 3 minutes until mixture thickens. Remove from heat. Cool.
In a bowl, mix together flour, baking powder, sugar and salt. In another bowl whisk together egg, melted butter and milk. Add wet ingredients to dry and mix with a spoon until mixture is just combined.
Divide the cranberry mixture between the 12 muffin cups. Carefully spoon the batter on top of the cranberries. Bake for 20-25 minutes until muffins are golden and test done. Let cool in pan on rack for 3 mintues. Invert onto rack to cool.
Yield: 12 muffins
