Veal Chops with Tomato Relish

Combining fresh plum tomatoes with sun dried tomatoes results in an intensely flavored relish. Just right for veal.

Ingredients

Relish:

1/4 cup sun dried tomatoes, packed in oil, drained and finely chopped

1/2 pound plum tomatoes, finely chopped

1 clove garlic, minced

1/2 teaspoon dried basil

2 tablespoons fresh parsley, chopped

1 1/2 tablespoons olive oil

2 teaspoons balsamic vinegar

1 tablespoon GOLDEN BLOSSOM HONEY

1/4 teaspoon hot pepper sauce

Chops:

4 loin veal chops, 1 1/2 inches thick

2 tablespoons olive oil

salt and pepper to taste

Directions

Serves: 4In a medium bowl, combine all the relish ingredients. Cover and set aside.Brush chops with olive oil, sprinkle with salt and pepper. Broil or grill chops for 8 minutes on each side or until cooked. Transfer them to a platter. Spoon relish on top of each chop and serve.
