1-2-3 Chicken Salad with Roasted Nuts

Easy to assemble. A delicious dressing adds zest to this tantalizing salad tossed with chicken and honey-roasted peanuts.


3/4 cup olive oil
1/3 cup balsamic vinegar
1 1/2 Tablespoons GOLDEN BLOSSOM HONEY
2 teaspoons Dijon mustard

4 cups cooked chicken, cut into 1/2-inch strips
8 cups mixed salad greens
2 red bell peppers, thinly sliced
1 cup honey-roasted peanuts, coarsely chopped


Coat chicken with some of the dressing. In a bowl combine all ingredients. Toss with remaining dressing and serve.
