Marshmallow Topped Sweet Potatoes

Ingredients

2 Tablespoons butter or margarine

1/3 cup GOLDEN BLOSSOM HONEY

1/2 cup miniature or diced marshmallows

1 (17 oz) can sweet potatoes (halves or pieces), drained

In the days before biology and botany were understood, people thought it was a special kind of magic that turned flower nectar into honey.

Directions

Arrange sweet potatoes in a single layer on bottom of buttered, shallow baking pan. Dot with butter and drizzle with honey. Bake 20 minutes at 350°. Spoon hot honey sauce from bottom of pan over potatoes and sprinkle with marshmallows. Return to oven just long enough to lightly brown marshmallow topping. Before serving, baste potatoes again with the hot honey sauce. Make 3-4 servings.
