Baked Chicken Breast with Lemon and Raisins

Ingredients

1 1/2 cup golden raisins

1/4 cup brandy or apple juice

1 1/2 Tablespoons GOLDEN BLOSSOM HONEY

1 1/2 Tablespoons butter or margarine

2 whole chicken breasts, boned, skinned and halved

2 onions, sliced

grated zest of 1 lemon

3 Tablespoons lemon juice

salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 350 °. In a small bowl, combine raisins, brandy and honey. Set aside. Meanwhile, heat butter in a large skillet over medium heat. Saute chicken until golden on each side. Place chicken in a 9″ x 13″ pan. Saute onions in same skillet until tender. Add raisin mixture, lemon zest and lemon juice. Stir. Pour over chicken. Bake 20 minutes, or until chicken is done. Serves 4.
