Butternut Squash Mousse

A colorful vegetable side dish. Delicious and healthful, butternut squash is a wonderful fresh winter vegetable.

Ingredients

1 large butternut squash, peeled, seeded and cut into 1-inch chunks

3 Tablespoons margarine

2 Tablespoons GOLDEN BLOSSOM HONEY

1/2 cup orange juice

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Cook squash in boiling salted water until tender, about 30 minutes. (Can also be prepared in the microwave.)
Combine cooked squash and remaining ingredients in a food processor or blender. Pulse until pureed. Can be prepared in advance. Reheat when ready to serve.
