Star-Spangled Berry Salad

Ingredients

Salad:

1/2 pint strawberries

1/2 pint blueberries

2 Tablespoons lemon juice

2 Tablespoons GOLDEN BLOSSOM HONEY

1/4 cup fresh mint leaves, chopped

1 bunch watercress, rinsed, dried, and trimmed

Dressing:

2 ounces soft goat cheese

1/4 cup half & half

1/4 cup milk

3 teaspoon GOLDEN BLOSSOM HONEY

grated zest of 1 lemon

1 Tablespoon lemon juice

1/2 teaspoon poppy seeds

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Salad: Remove stems from berries, rinse and pat dry. Place in medium bowl. Gently toss the berries with lemon juice, honey and mint.Dressing: Place all dressing ingredients into food processor and process until smooth. Cover and chill until ready to serve. To serve, place berries in the center of large plate and circle with watercress. Drizzle a little dressing over salad. Pass remaining dressing.
